This is an easy, but delicious slow cooker dinner.
Slow Cooker Mexican Lasagna
1 pound ground beef
1 cup onions
8 corn or flour tortillas (you might need more or less depending on the size and shape of your slow cooker)
1 can black beans, drained
1-1 ½ cups shredded cheddar cheese
1-1 ½ cups shredded pepper jack cheese
1 can fire roasted tomatoes and green chilies
1 packet of taco seasoning or ¼ cup of homemade taco seasoning (I’ve linked the recipe I use below)
Sour cream , if desired
Brown ground beef and onion. Drain. Add taco seasoning, tomatoes with green chilies and black beans. Mix together.
Spray slow cooker with cooking spray or olive oil. Add 1/3 of ground beef mixture to slow cooker. Lay tortillas on top. If needed, tear off pieces of tortilla and use it to fill in any spaces. You’ll want the tortillas to come all the way to the edge and the ground beef mixture to be covered. Next, add 1/3 of each of the cheeses. Repeat layers twice. End with ground beef mixture and cheese.
Cover and cook on low for 3-4 hours Cut into 8 wedges. Top each wedge with sour cream, if desired.

Thank you so much for sharing this slow cooker recipe! I made it tonight
but I went ahead and substituted the ground beef and taco seasoning instead
using the taco seasoned ground turkey. It came out delicious!! My husband
even thought that the ground turkey was ground beef. It just was so good
and easy to make. My side dish was sliced cabbage mixed with avacodo and
seasoning and it just all went together. Thanks again!!
Going to make this as soon as we go to the grocery store Monday. I love
EVERYTHING Mexican and EVERYTHING that can be cooked in my crockpot.

I made this before leaving for an amusement park with my family. It was so

Totally adding this to my menu this week!
I finally tried this recipe! I made it meatless and it was very good. I
used extra large burrito tortillas and they fit my slow cooker
perfectly! The only thing I would change for my version is adding an extra
can each of black beans and Rotel to make up for the lack of meat.

Yum Jen- this looks so good! I like that you can change the ingredients so
easily to make it different. This will be on my meal list for next week for
sure. I haven’t been to Trader Joes in a long time due to the icy and snowy
road conditions, and given that it is about 45 minutes away taking rural
country roads. I am going through TJs withdrawal!!!!

This looks really tasty Jen! What a great idea to use tortillas. I also
prefer to make my own taco seasoning that way I can control what goes into
it.
