A diner classic, this main-dish salad combines cooked chicken, crispy bacon, avocadoes, blue cheese, and hard-boiled eggs with shredded iceberg lettuce and chopped green onions. Serve with a creamy ranch, honey mustard, or French dressings or balsamic vinaigrette. It’s a great way to stretch out leftover chicken.

    This is one of my favorite summer salads, especially when I don’t feel like
    cooking after work. And yes, it goes great with ranch dressing or even
    poppy seed dressing. Yumm.
