I will confirm Chef John’s assertion that ladies love paella. I am a lady
and I love paella, so clearly this is accurate information.
Can someone explain to me the purpose of keeping the shrimp tails on for
this?
I would advise against posting a “classic” paella video in the future. For
sure some butthurt Spanish twit will bitch and moan and whine about how
this is not AUTHENTIC paella.

I cant stand how uppity and self-righteous Spanish people are about their
cooking. My mother and her 3 sisters all cook “Curry Chicken” a different
way. Only difference is we don’t bitch about the traditional recipe because
recipes change with age and whats available around you…
I’ve never hear of this dish but it looks good.

After watching this about 10 times, and recently visiting Barcelona where I
had some great Paella, I decided to try this out.
Mine came out of the oven with no visible liquid and some of the rice still
nearly raw. I wonder if it’s because I used the small oven on my double
oven, if maybe being closer to the element evaporated the water too
quickly. But I just put it on the stovetop, added about a cup of extra
broth, covered for a few minutes, uncovered, and after about 10 minutes it
was perfect. It even ended up with crusty rice on the bottom which was
amazing!

as much as i dislike american units, using the standard cup for the stock
and rice measurements is so much easier than measuring out the rice in
grams and the stock in ml

Yummy! Definitely going to try this out, but shall heed another’s advice
below, and go with 2 and a 1/2 cups of broth rather.
I’d also squeeze fresh lemon juice on top … or maybe even drizzle with
lemon & garlic butter instead of olive oil. 🙂
