One Pot Pumpkin Pasta- with yoyomax12
A delicious pasta dish made in one pot. A great main meal or side dish.

1 cup pumpkin puree
1 cup onion finely chopped
3-4 cloves of garlic finely minced
4 cups vegetable or chicken stock
2 tbsp olive oil
1/2 cup white wine
1/2 tsp nutmeg
1/4 tsp red pepper flakes (more or less to taste)
1/4 tsp black pepper
9 oz linguine pasta
1 tsp salt (I suggest that if you use a salty chicken broth that you omit the salt and taste it toward the end of cooking and add salt to taste then)
4 oz goat cheese
Chopped fresh parsley or cilantro for garnish
Place all the the ingredients, except for goat cheese and herbs, in a large pot (at least 7 quarts)
Bring to a boil while stirring with a pair of tongs. Stir so that the pasta noodles don’t clump together. Once boiling continue to cook until the pasta is al dente (9-14 minutes) or to the degree of tenderness that you like. At the beginning you only need to stir occasionally, toward the end of the cooking time you should be stirring pretty much continuously to keep the pasta from sticking to the bottom of the pan.
Once pasta is cooked, crumble the goat cheese into the pot and stir pasta until goat cheese is melted and blended in.
If you find that the sauce is too thin at the end of the cooking time, allow to sit off heat for 2-3 minutes and it will thicken on its own.
Sprinkle with parsley or cilantro before serving.
This will serve four as main meal.
