MEG | HEALTHY BAKED CHICKEN NUGGETS for Kids (and Adults!)

These baked chicken nuggets are so much healthier than the fried ones you find at restaurants. They are also super easy and your kids will love them! Healthy Baked Chicken Nuggets for Kids and Adults

Ingredients
– 1 lb Chicken Tenders
– 1/2 Light Coconut Milk
– 3/4 cup Panko breadcrumbs
– 1/3 cup Grated Parmesan
Salt & Pepper

Directions
1. Preheat oven to 425. Line baking sheet with aluminum foil (or parchment paper).
2. Cut up chicken tenders into nugget size (or any size you like).
3. Put chicken and coconut milk in bowl or ziploc bag and put in refrigerator for at least 15 minutes (up to 3 hours).
4. Toast Panko in 375 oven for 6 minutes or until golden (or you can do it in the toaster, but watch that it doesn’t burn). Cool it and place in bowl. Add parmesan cheese, salt and pepper.
5. Remove piece of chicken from coconut milk and less excess milk drip off. Dip the chicken in the panko mixture until coated on all sides. Place on baking sheet and repeat with remaining chicken pieces.
6. Put in oven for at least 12 minutes (I usually do 15) or until it looks really golden and crispy.

Kid Friendly Ranch Dip
– 1/4 cup nonfat greek yogurt
– 1 tsp dried dill
– 1/4 tsp garlic powder
– 1/4 tsp onion powder
– any fresh chopped herb (dill, chives, parsley)

Adult Honey Mustard Dipping Sauce
– 1/4 cup nonfat greek yogurt
– 1-2 tsp dijon mustard
– 1-2 tsp honey

    chicken, etc) is 1 cup Veganaise, 1/2 cup of ketchup, a bit of garlic and
    onion powder and yum!
