Pulled Chicken Sandwich

For the Pulled Chicken:
3 boneless, skinless chicken breast
1 small sweet onion, thinly sliced
1/2 cup bbq sauce
1/2 cup chicken broth
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp cumin
Preheat oven to 350F.
Place chicken breasts in a small baking dish and season with salt and pepper.
Place sliced onions over top of chicken.
In a small bowl combine bbq sauce, chicken broth, garlic powder, chili powder and cumin.
Pour over chicken breasts.
Cover baking dish with foil and cook for 1.5 hours.
Remove sauce from dish and set aside.
Using two forks, shred chicken.
Pour sauce back over shredded chicken.
For the coleslaw:
2 cups red cabbage, shredded
1/2 cup plain yogurt
1 tbsp apple cider vinegar
2 tsp honey
salt and pepper
In a small bowl combine yogurt, apple cider vinegar, honey, salt and pepper.
Whisk well.
Pour sauce over cabbage and toss until coated.
Stack pulled chicken and coleslaw on a bun.
Enjoy!

Fat: 2g
