Thai Kaeng Matsaman Curry (แกงมัสมั่น) is distinctly different in flavor from other red curries, due to the addition of star anise, cardamom, and cinnamon.

Ingredient List:
Beef
1 pound – beef chuck steak, cut into 2 inch cubes
Coconut Milk
2 Cups – divided into 2 portions
Potato
4 – medium potatoes, peeled and cut into 2 inch pieces
Brown or Yellow Onion
1 – large onion, sliced into small wedges
Peanut
1/2 cup – raw peanuts, toasted until browned a little
Massaman Curry Paste
3 – 4 Tablespoons – packaged, or homemade
Coconut Sugar
3 – 4 Tablespoons
Tamarind
2 teaspoons – Tamarind paste, not whole fruit
Cassia cinnamon
1 stick – small stick cinnamon or cassia
Bay leaf
1 – bay leaf, 2 if they are small
Lime
1 1/2 teaspoons – fresh lime juice
Orange
1 1/2 teaspoons – fresh orange juice
Kaffir lime leaves
2 – leaves, thinly sliced to use as garnish
Thai Long Chili
1 – mild red chili, slivered to use as a garnish
