    Do you rinse and dry the eggplant after the salting and pressing, or just leave the salt on it?

    interesting – i've never used meat in my eggplant parm and always bread the eggplant before frying..

    Well the meat is really just for the sauce. I have found the pasta sauce always taste better with meat! 🙂 It adds a lot of flavor. Especially pork. Without the breading you taste more of the eggplant. I like it much better without the breading. You should give it a try.

    Grandma did not use them. It's the best way I've ever had them. Without the breadcrumbs to can taste more of the eggplant. Total YUM!

    ahhh I have to but one of those garlic peelers…..You can also put a whole bunch in a pot, shake it really fast and the paper comes off

    Just way too long. Could have been a little less noisy and maybe cut allot of the video out. I didn't watch the whole thing I will just use some of the ideas I guess….
