Does cooking it until it’s brown like that destroy any of the benefits? I
baked eggplant tonight to make small pizza circles. It was great, but a bit
wet. Not sure I like the idea of adding so much salt to prevent this.

We use canola oil for Indian cooking because it offers the heart healthy
benefits of olive oil without the pungent flavor — exactly the opposite of
why you are using it :). This is of course our personal preference, but we
feel that the strong flavor of olive oil overtakes the flavor of Indian
spices. We’ve never tried it, but you could possibly warm the olive oil
slightly, add your whole spices and keep it in a tightly covered jar. Try a
small batch first :).

look up smoke points. different recipes call for different oils based on
their smoke points, which is when the oil breaks down and begins to smoke
