Eggplant Parmesan (Eggless)

A classic Italian baked eggplant Parmesan casserole with fried eggplant slices layered with Mozzarella, Parmesan, marinara sauce. If you don’t want to fry eggplant then Eggplant slices can be dipped in egg(use egg substitute for vegan) and bread crumbs and then bake, instead of frying. This is one of my favorite italian dish I usually eat at “Olive Garden” restaurant. I tried at home with many different ways but this is the best recipe without egg. You will find no difference at all than restaurant…Try and share with me…

    Yes, some brands do have egg in it.

    please note that parmesan cheese is NOT vegetarian. it contains animal
    rennet. vegetarians please be careful with this ingredient 🙂

    plain flour meaning maida?…Also can u bake or pan fry it the eggplant
    instead of deep frying it?

    Hi Bhavna,I did make the recipe but the one thing I noticed was that my
    eggplants drank most oil while I fried them. I did pat them dry before
    frying. Pls help

    Yah, that’s right so that’s the reason, I always prefer homemade stuff so
    whatever is possible to make at home, I do not buy ready from store.
