Ready for some vegan meal ideas? In this episode of What I Ate Wednesday, I share my recent favourite high protein breakfast and snack plus a lighter version of Pasta Alfredo. Plus, I finally share what happened to that tiny pineapple.

SILKEN TOFU ALFREDO SAUCE – Serves 4

Ingredients (US)
6oz silken tofu, firm/extra firm
1 tablespoon nutritional yeast
1/2 teaspoon red chili flakes
1 teaspoon lemon juice
1 clove of garlic
1 cube chicken-style bouillon
2 tablespoons water
Ingredients (Metric)
175g silken tofu, firm/extra firm
15cc nutritional yeast
2.5cc red chili flakes
5ml lemon juice
1 clove of garlic
1 cube chicken-style bouillon (about 5 cc powder)
30ml water
Combine all the ingredients. If using a high-powered blender, you may not need to add water. Blend until smooth.
Add this sauce to pasta and heat on medium to warm up. The sauce will thicken after resting a few minutes.

I might try that alfredo sauce! I must have had a bad batch of nutritional
yeast when I bought it. (tasted like body odor…or fish food). And it is
okay to shake the magic bullet. It actually says in the manual you are
supposed to shake it for some things. So shake away!
What is the name of the ingredients you mixed for the celery dip? Do you
ever feel concerned about the amount of estrogen you are ingesting with so
much tofu?
I knmow you always love hearing new ideas to try. Right now I have been
loving throwing rice, water, frozen corn, frozen carrots, and 1 diced
potato into my rice cooker. When the rice cooker goes off it is all cooked
so I just mix together and eat with either chili sauce or bbq sauce. So
good and I thought you might like. I bet it would be awesome with some
beans!
These are seriously delicious recipes!! Only how do you not get constipated
with such a heavy load of soy and soy products?
