Deluxe Seafood Salad for a Crowd Recipe ~ Noreen’s Kitchen

Greetings! I needed to make a salad for a teacher appreciation luncheon that took place this past week. The request was for a seafood salad, after I had received no less than three mass emails requesting this and the PTO bascially begging and saying that you should just go and buy the premade stuff at the Walmart, I thought ENOUGH! So we are making deluxe seafood salad for a crowd.

My seafood salad starts with Surimi or what everyone knows as imitation crab meat. This happens for two reasons, the first is we are not millionaires and the amount of money it would cost to get picked freshly steamed crab would be a small fortune. Second, we enjoy this. If you do not, then you may use the real thing. But bring your wallet and a freshly minted credit card! LOL! I also added some small shrimp, celery, bell pepper, green onion, black olives and a killer dressing that is reminiscent of a Remolaude sauce or aLouis dressing which is served with the New Orleans classic salad Shrimp or Crab Louis.

The school asked each person to bring a salad that would feed at least 10 but mine will easily feed between 16 and 20 in my estimation. Especially if there will be several other offerings at this luncheon. I have no doubt that this will satisfy many a teacher for this auspicious event.

I hope you will give this fresh and cool salad a try one night when you want something light and delicious for supper. This will easily keep in the fridge for up to a week and if your kids are like mine, this will disappear quickly along with a box of butter club style crackers.

    Looks totally deeeelish *EXCEPT* for the olives…..  I am a dyed in the wool, truly unreasonable and totally unrepentant olive hater!!  But, just to not be a total Grinch about it, I bookmarked it under my "Yummy Recipes" folder, and I liked it as well……  The dressing looked awesome just on it's own!  Thank you for another ALMOST totally wonderific recipe!!! 🙂 tootles, Della

    I noticed you referenced Best Foods. East of the Rockies, it's called Hellman's (or so has been my experience), though I have friends on the West Coast who say it tastes slightly different than Hellman's.   Has that been your experience?

Also I didn't read the recipe but just watching the video I knew to buy salad size shrimp and they were pre-cooked so it was all good! My girls and husband thought I was a gourmet cook!!     You should mention that the shrimp is already cooked for the novice viewer.  Also, it would have been nice to see the green onions "curled" before serving.

    This looks delicious!  I like surimi, too, and it holds up well in salads rather than using real crab meat (which is better used in other ways, especially for the price, IMHO!).  To make this recipe stretch, I would also maybe add some small pasta shells.  That dressing looks fabulous!  I wonder who I can get to make this for me for Mother's Day?  Thanks for another fab recipe, Noreen!  Happy Mother's Day!

    For sure will be trying your version of seafood salad for summer picnics…looks amazing!  I've always dressed my seafood salad with lemon juice and veg oil…more of the vinaigrette style…this looks too yummy to not try!  You've given GREAT tips…chopped celery heart is the BEST taste…loved the idea of the celery heart rosette…will be trying tha too…thanks so much for this wonderful video.  Have a Happy Mothers Day Noreen!
