This is a super quick and easy vegan curry fried rice recipe that you can make any time you want something tasty that is really good for you too!
Eat as a meal itself, or you can use it as a side dish, or even as a rice salad at party etc. Best of all, kids love this too and it is very easy to change the spices and ingredients around to vary it up a bit 🙂
This recipe has no added oil or fat and is 100% plant based vegan!

Ingredients:
3 large cloves of garlic grated or minced (about 2 to 3 tsp of grated garlic)
1 large thumb size of ginger grated (about 3 tsp of grated ginger)
1/4 cup vegetable broth
1 small Spanish onion chopped
1/2 cup frozen peas
1/2 frozen corn kernels
3 tbs sliced scallions
3 cups cooked rice (I used white organic)
1 tbs curry powder
OPTIONAL EXTRAS:
salt, pepper, Mrs Dash seasonings, soy sauce, sesame oil etc

I just made this and it is sooooo delicious!!! I made mines with mushrooms,
corn, onions, and spinach. I didn’t have fresh ginger so I used ground
ginger. Also used a bit of coconut oil. Smells soooo good in my house right
now! Thanks for the recipe.

I’m stuck in my bedroom with a few oranges and bananas and watching all
your videos and Its making so hungry! They’re tiling my floor so I can’t
leave my bedroom or get into my kitchen. Someone needs to bring me some of
this yummy food to my window
I don’t know if you’ve done it yet (I don’t think you have), but one of my
favorite dishes is marinated portobello. I’d love to see your take on that
classic! They’re great in a pan or grilled/broiled too. 
Aint nobody got thyme for that!
I tried this tonight….as my son is on a gluten free diet. i kinda screwed
up the ammounts of peas and sweetcorn etc….but, it was a bit bland….but
that might have been because of the Tesco curry powder i used. But at the
end of the day…my son gobbled it all up….so, it served its purpose. Not
bad for a first attempt lol
This looks really easy and delicious. Bet some sliced mushrooms would be
good in it, too!

What can I use instead of vegetable broth ?
No oil is good. Can never find recipes with no oil. :)
I also added finely diced carrots and it was fabulous! This recipe even
impressed my non-vegan parents! Thank you :)

Looks great! will make this with brown rice tomorrow.
Like these ideas-On Brown RIce- I noticed that if you add more water to
brown rice you an get a lighter texture like white rice.
