Crock-Pot Mexican Meat Loaf Recipe

Crock-Pot Mexican Meat Loaf Recipe

Ingredients:
¼ cup rice
1 cup bread crumbs
2 lbs. ground beef
1 onion (chopped)
2 eggs
1 cup salsa
1 cup shredded pepper jack cheese
1 teaspoon cayenne pepper
1 tablespoon fresh thyme
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
1 teaspoon salt

Preparation:
1. Add 1 cup boiling water to rice. Wait 30 minutes then drain water.
2. Make a container from aluminum foil so you can easily remove the meatloaf when done.
3. Mix ingredients together to form a loaf.
4. Cover and cook on high for 4-5 hours or on low for 8-10 hours.
5. Lift the foil to remove the meat loaf from the crock pot.

    Yes I would recommend covered for 3/4 of the time and uncovered for 1/4 of
    the time to get a crust. You’ll have to see how long it takes in a regular
    oven, probably about 1.5 to 2 hours.

    That’s awesome! I love dumpling. Then can be frozen and easily steamed.
    When you freeze them make sure they don’t touch otherwise they will stick.
