Chicken & Mushroom Casserole is an amazing meal that can be made in around 30 minutes! Chicken Breast Fillets are combined onions, mushrooms, mustard and chicken stock to create a delicious, creamy casserole that is both economical and easy to make – Give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

2 Large Chicken Breast Fillets (diced, about 400-500g)
1 Medium Brown Onion (chopped)
200g Button Mushrooms (quartered or sliced)
Olive Oil
1/4 Cup of Plain Flour
1 Tablespoon of Dijon Mustard
1 Cup of Liquid Chicken Stock (I used Campbells Real Stock)
1/4 Cup of Sour Cream
Salt and Pepper (to season)

Preparation Time: 5 minutes
Cooking Time: About 30 minutes

SERVES 4

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
(Look up Google for a conversion chart if using Imperial)

    Hmm..I don’t think I can find Chicken Stock anywhere near where I live XD
    can I use water+real chicken soup powder instead? >.<

    I made it in a pan,with mild mustard,without adding sour cream and it was
    amazing! .

    Just thought I would add I used to make a very similar recipe that also had
    bacon in it. I would line a deep casserole dish with puff pastry then put
    in the hot chicken casserole mix then top with a further sheet of puff
    pastry then stick in the oven for 40 minutes at 180 degrees C. Set aside to
    cool & enjoy :-)

    I made similar except did it in the slow cooker, added quite a bit of
    thyme, parsley and a little paprika. Also didn’t use sour cream but
    instead a can of condensed cream of mushroom soup. Delish!

    My mid-week time saver! I barely have time to make dinner after coming from
    work and I just cooked this this morning before heading to the office.
    ‘Twas delicious, the dijon mustard did its job well! Modified a few things
    here and there like adding a hint of rosemary for garnish and a dash of
    parmesan. Yum! Can’t wait to come home to taste this tonight. Thanks, David!

    @unknown1o1 These numbers are approxiamtions depending on the measurements
    used and the variance in food and online sources. chicken = 679 calories,
    Onion = 60 cal, mushrooms = 60 cal, olive oil = 80 cal, flour = 110 cal,
    mustard = 10 cal, chicken stock = 12 cal, sour cream 118. TOTAL CALORIES =
    approximately 1129. mostly from chicken. Overall fairly healthy as you are
    having a lean meat with lots of protein, there are vegetables. flour for a
    grain, Shouldnt’ be too high in salts. Woot
