Who doesn’t love these Italian staple dishes? They got even better because they are combined, low in carb, healthy, quick, cheap. Enjoy guilt free.
Ingredients for 6 servings (it goes fast!!)
olive oil, use as necessary
1 ea eggplant, sliced
6 ea chicken breast (6oz each)
1 ea garlic clove, large, minced
1/2 ea spanish onion, small dice
2 ea tomatoes, medium dice
2 tsp oregano
8 leaves basil, chiffonade (basically slice fine)
1 cup mozzarella, grated
1/2 cup parmesan cheese, grated
