Blueberry Bran Muffins
Food Ingredients:
1 1/2 cups whole bran cereal 1 cup buttermilk 1 egg beaten 1/4 cup oil ( applesauce can be substituted for low fat) 1 cup flour cup brown sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup blueberries
Recipe preparation:
1 Preheat oven to 400 F. Combine bran cereal and milk and let stand for 5 minutes. Mix dry ingredients. Blend sugar, egg and oil into bran; add dry ingredients and stir just until mixed. Fold in berries. Fill prepared muffin cups 2/3 full. Bake for 20-25 minutes.
