Recipe ingredients and directions:
Low-Fat Black Beans and Rice
1 small onion, chopped
1 small green pepper, chopped
2 garlic cloves, minced
1/4 cup vegetable broth
1/8 teaspoon pepper
1/8 teaspoon oregano
1 bay leaf
16 ounce can black beans
1 teaspoon sugar
2 1/2 cups water
1 cup rice
1 teaspoon vinegar
1 teaspoon white wine
In large saucepan over high heat, saute onion, green pepper and
garlic in broth for 5 minutes. Add pepper, oregano, bay leaf, black
beans, sugar and water to onion mixture. Heat water to boiling and
add rice. Reduce heat to low. Simmer for 30 minutes; stirring
occasionally. Add vinegar and wine; stir to mix. Cook for 2 minutes
longer. 8. Serve hot. Makes 4 servings.
