Black Beans Rice 03 – Bean Cereals Food Recipes

Recipe ingredients and directions:

Black Beans and Rice

1 onion, chopped

fresh garlic, minced

1 1/2 – 2 cups black beans, cooked and drained

2-3 fresh tomatoes, chopped

8-oz can tomato sauce

1/2 cup water

Chili powder or fresh chilis to taste

1 bay leaf

1 cup fresh or frozen corn

Saute onion until tender in olive oil. Add garlic and saute a

minute more. Add remaining ingredients except for corn. Simmer

for 20 minutes until flavors blend. Add corn and cook for another

5-10 minutes. Serve over rice, and if not vegan, top with a strong

cheese, like a sharp cheddar. Good with fresh tortillas on the

side.
