In partnership with FaveDiets (http://www.favediets.com/snacks ), I wanted to continue my series of side dishes and snacks by making this long time favorite. It may not exactly look like popcorn, but it has that same salty snack taste and feel of it. The browning of the cauliflower (carmelization) really adds to the flavor and sweetness of it. You can burn it, but it takes a long time before it becomes unpalatable. I am sure you guys will love this recipe!

Ingredients

1 1/2 heads cauliflower (6 cups)
1/4 cup oil (coconut oil preferred)
1 tbsp salt
1 tsp salt free seasoning, optional

Makes 4 servings.

Nutrition Info Per Serving:
96 Calories, 7g Fat, 8g Total Carbs (3.8g Fiber) , 3g Protein

    @bowulf How do you count net carbs in this case? Do you count the fresh cauliflower or the cooked one?

    @reminiscenze I took the carbohydrate count of the 6 cups of the original raw cauliflower and subtracted the fiber out of it. The cooked cauliflower is much smaller and not equal to 6 cups any longer.

    I know 14 days on induction is the minimum recommendation, but how long did you stay on induction? Did you test with ketosticks?

    I did Induction for roughly a year, but I did occassionally go up to OWL for berries when they were in season. I do have a video on how long to do Induction on Youtube, but it is more about how you feel and how happy you are with food selection on Induction.

    Initially I did test with ketostix, but in time, I trusted how I felt rather than having to trust a stick. Plus I largely ate the same general foods every day, so I knew I wasn't going to get derailed by anything.

    I have ate this before as side, or you could combine with bacon in the final turning to add some additional fat and protein to make it into a meal too.

    Can you do this with broccoli also? I'm sure it would taste different but I have a hard time getting my kids to enjoy culiflower. They cant get enough broccoli though.
