Atkins Diet Recipe: Low Carb Eggplant Parmesan (IF)
** Recipe included in my new low carb, gluten free cookbook, Low Carbing Among Friends. Please check it out at our website @ http://www.amongfriends.us **
In another recipe coming out of Jennifer Eloff’s awesome low carb cookbook, Splendid Low Carbing, I prepare a food that I probably would have swore I would never eat — eggplant. In just another one of those amazing things that low carb lifestyle brought to me, my taste buds have changed. I now like eggplant well enough to voluntarily eat it.

I use a bit of beef stock for even more flavor in my ground beef and also I cut the eggplant lengthwise …:)
Can I use that salsa ragu on the induction phase?
Kent, this looks delish!! I am going to make this one too. I love eggplant, however I remove the skins. ;)
so ow many portions is that dish? Just curious 🙂 it looks delicious, I am going to make it asap. Thanks for taking the time to share.
This evening, I made this with a different sauce (one that's even more low-carb than Ragu, but more expensive, is the Mario Batali cherry tomato Marinara sauce) and no meat. It is SO good, and guilt-free. Thank you very much for sharing!
I'll have to make this soon! This looks awesome.
im on the keto diet, and ive been doing eggplant with a pork rind breading, i hadn't thought to use parmesan!! thanks a bunch, i will be trying this next week.
can i frezze the left overs
Thank you so much for these videos. It is so helpful to see you cooking in your kitchen; even grabbing plates from the cabinet. It makes me feel that I will be able to do this in my kitchen, too!
this was so yummy. My DH even ate some.
I made this and we LOVED it. You are such a great chef – and have been a big part of my menu planning in Atkins induction. Thank you for the excellent recipes!
I am new to low carb life style and I must say that I really enjoy your work! I mean I try to watch my cals too… The nice thing I really love about low carb foods is that you can always double your servings and get less cals. For ex: This meal is 456 cals with 6 servings. 456 x 6= 2736 now make this 12 serving and you can cut that cal and carb amount down 228 cals and 4.65 carbs ^;^ I love you man! New scrib!
Looks gooood
Thank you!
