Apple and Cranberry Crumble – Gordon Ramsay

An absolute British classic – with some Gordon Ramsay twists. Grate the apple and cook into a cinnamon and vanilla caramel. Delicious.

I this the one as shown on #Channel4  which I can't seem to find anymore – URL no longer exists on the Channel 4 website. The finished crumble looks different but I think I'm hearing a lot of the same ingredients which I still have a list of.

    Caster sugar (75g)
    Braeburn apples (1kg)
2 x Vanilla pods (seeds scrapped out)
    Crystallized ginger (30g, finely chopped)
    2 x Orange, zest
    Sultanas (100g)
    Dried Cranberries (100g)
    4 x star anise
    Plain flour (100g)
    Butter (50g)
Blanched hazelnuts (50g ,toasted and crushed)
    Porridge oats (40g)
    Light muscovado sugar (70g)
    Ground cinnamon
    Grated nutmeg (fresh grate)

This is amazing! I've tried it as is and even with pears and dry powdered ginger and sliced almonds in the topping. It's always hit the right notes. I even managed to make the crumble 'filling' ahead without the lemon and placed it in the refrigerator. Prepare the topping and add lemon zest and juice just before it's ready to go into the oven. Lovely dessert for a cozy evening with friends
