Caprese Breakfast Pita
1 tsp oil
1 clove garlic, minced
½ cup cherry tomatoes, halved
3 eggs
1 tbsp milk
salt and pepper
3-4 fresh basil leaves, chopped
¼ cup bocconcini balls
½ whole wheat pita

Heat oil in a large frying pan.
Sauté garlic and cherry tomatoes for 2-3 minutes or until tomatoes begin to blister.
In a medium bowl, whisk eggs, milk, salt and pepper.
Add egg mixture to frying pan. Scramble.
Once eggs begin to set, add basil and bocconcini cheese. Cook for an additional minute.
Stuff pita with eggs.
Enjoy!

Cheesy Jalapeno Breakfast Pita
1 tsp oil
¼ jalapeno, minced
1 tbsp cream cheese
3 eggs
1 tbsp milk
¼ tsp garlic powder
salt and pepper
¼ cup cheddar cheese, shredded
½ cup cooked chicken, diced (optional)
½ whole wheat pita

Heat oil in a large frying pan.
Sauté jalapenos for 30 seconds.
Add cream cheese and cook for another 30 seconds or until it begins to soften.
In a medium bowl, whisk eggs, milk, garlic powder, salt and pepper.
Add egg mixture to frying pan. Scramble.
Once eggs begin to set, add cheddar cheese and chicken if desired. Cook for an additional minute.
Stuff pita with eggs.
Enjoy!

Hawaiian Breakfast Pita
1 tsp oil
¼ cup ham, finely diced
¼ cup pineapple, finely diced
3 eggs
1 tbsp milk
salt and pepper
¼ cup mozzarella cheese, shredded
½ whole wheat pita

Heat oil in a large frying pan.
Sauté ham and pineapple until pineapple begins to caramelize; about 4-5 minutes.
In a medium bowl, whisk eggs, milk, salt and pepper.
Add egg mixture to frying pan. Scramble.
Once eggs begin to set, add mozzarella cheese. Cook for an additional minute.
Stuff pita with eggs.
Enjoy!
