  1. Pastastic!

    If by macaroni – I get confused with macaroni speak – you mean the very
    small elbow type pasta shapes, then this machine can’t make them. Its
    attachments are typically for long elbow pasta. However Imperia (and its
    competitor Marcato) do sell separate pasta extruder machines, which will
    help you make small pasta shapes like macaroni and penne. I’ll be reviewing
    Atlas’ product on my Pasta Recipes Made Easy site soon…

    quick question do you have to let the noodles dry before boiling? If not
    will they become soggy?

    I’ve used that machine for several years and the tagliatelle has always
    worked well. The spaghetti cutter however always end up in a mess as the
    cutter fails to separate the strands. If anyone can tell me what I’m doing
    wrong please tell me

    Hi EZ, You deconstructed your machine? 😉 You’re actually only supposed to
    ‘dry clean’ these steel machines, brushing the flour away with the small
    brush provided rather than pulling them to bits. The only part designed to
    be removed is the fettucini/tagliatelle attachment. If you’ve really gone
    to town on it, why not send me a pic of the bits (through my site – top
    right) and I’ll ask Imperia themselves to advise. Good luck! Matt

    @Cobalt961 Hi there. You could definitely make dough with different, more
    chinese flour, but the two cutting options you get with this standard model
    are set. Maybe an additional angel hair (capelli d’angelo) attachment would
    be better for superfine noodles.

    @goodtastecity It fits before the rollers to help you to feed the pasta
    into the machine, it’s difficult to explain but the folded part fits onto
    the body of the machine before the rollers, so the adjustment dial should
    be to your left, slide the tray into position and click it back towards
    yourself, it works great:-)

    @pianogooroo Hmmm… can’t say I’ve ever seen any. I would be able to make
    one huge tagliatelle by sticking several together (so I guess you might do
    the same with spaghetti), but cooking it without breaking it could be a
    nightmare!

    @matwade76 Hello, Yes…I cooked the pasta for about a minute and the sauce
    was prepared before hand. I drained the pasta and placed it into the sauce
    in a boil and it seemed to stick together and not separate. Do you think I
    under cooked?

    Hi, Nope, I use a little tripod I got in a normal camera shop. The camera
    just screws into the plate at the tripod’s top end. Matt
