The Chef’s Academy Tournant Society Presents: Chef’s on Stage. Chef Ben Hardy presents “Individually Plated Desserts” in this lecture put on by the school’s Tournant Society. Chef Hardy takes students through tempering chocolate, making marshmallows, and the plating process in this lecture. The Tournant’s society lecture series is helping students gain knowledge in specialty areas of the chef’s who are participating. This series will be covering everything from desserts, to breads, to gardening, and also covering competition cooking.
