Hi, I’m Stephanie Gallagher, the Iron Chef Mom — http://www.TheIronChefMom.com — and today, we’re making an easy salisbury steak.
For this recipe, you will need:
1 lb. ground beef
kosher salt and freshly-ground black pepper, to taste
2 Tbsp. butter
1 medium onion, roughly chopped
2 Tbsp. flour
2 cups beef stock or beef broth
1 Tbsp. Worcestershire sauce
Preheat the oven to 350 degrees F.
Place the ground beef in a mixing bowl. Add some fresh-cracked pepper. And divide the meat into four portions. Form each portion into an oval, about the width of a hamburger.
Now melt the butter in a large, oven-safe skillet. Add the beef patties, and season with salt. You want to brown them on both sides. You don’t have to cook them through at this point — you just want to get a nice crust on them. I like using a cast iron skillet, because it makes it easy to brown the patties nicely.
When the patties are browned on both sides, remove them to a plate. Add the onions to the pan, and cook, stirring, until they’re softened.
Now sprinkle the flour over the onions, and stir until the flour gets coated with the juices in the pan.
Add the beef broth and Worcestershire sauce, and bring to a simmer until the sauce thickens.
Add the beef patties back to the sauce. Spoon the sauce over the patties to cover them completely, and bake for 30 to 40 minutes until the patties are cooked to 160 degrees F.
