Quick & Easy Breakfast Muffin Recipe | Cupcake Jemma

When you’ve spent the night binging on cupcakes and chocolate, you might fancy something a little less naughty for breakfast when you wake up. But you’ve still got your Sweet Tooth to satisfy. What a dilemma! That’s where this week’s video can help. These Oat and Date Breakfast Muffins are the perfect morning treat providing not only a slow energy release tummy-filler but also a fluffy, sticky sweet treat that isn’t going to make you feel TOO guilty.

RECIPE

1 cup jumbo oats
1 cup porridge oats
1 ½ cups plain flour
½ cup soft dark brown sugar
½ cup caster sugar
2 tbsp oatbran
2 tbsp wheat germ
2 tsp ground cinnamon
1 tsp salt
1 ½ tsp bicarbonate of soda
150g chopped medjool dates
1 cup buttermilk
½ cup vegetable oil
1 large free-range egg
1 tsp vanilla extract
⅓ cup boiling water

    These awesome muffins keep really well for about 4-6 days in an airtight
    container so you can eat a couple every day (unlike me, who ate about 5
    just now…and I want another one…)

    Is it possible to make this batter up front and then freeze it or something
    like that (possibly even in their forms)? So you can just get one or two
    out to bake in the morning and then have fresh warm muffins for breakfast?
    Instead of having 12-18 muffins which might either go stale or straight to
    my hips.

    I just made these! They’re really good. And I made them with your crunchy
    pecan toppings from the crunchy pecan banana bread video.

    Problem though is they stick to the muffin liners. How can I prevent that?
