Pineapple Tomato Sauce

Food Ingredients:
1 medium tomato 3/4 cup pineapple juice 2 teaspoons cornstarch 1 teaspoon oil 1 garlic clove, finely chopped 2 scallions, finely sliced 1 teaspoon sugar 3 teaspoons fish sauce

Recipe preparation:
1 Puree the tomato in a food processor or blender 2 In a small bowl, mix pineapple juice and cornstarch 3 In a small saucepan, heat oil and stir fry the garlic, onion and scallions until fragrant 4 Stir in the tomato puree, the pineapple cornstarch mixture, sugar and fish sauce. 5 Simmer over medium-low heat until sauce becomes thick and clear.
