Petites Madeleines

Food Ingredients:
1 cup all purpose flour 1/8 teaspoon baking soda (2 pinches) 3 large eggs 1/2 cup sugar cup melted butter of salt zest of a lemon

Recipe preparation:
1 In a mixing bowl beat the eggs, 1/2 cup sugar, and pinch of salt, until light and fluffy. 2 Sift the flour and baking soda and fold into the wet ingredients. 3 Fold in the melted butter and lemon zest. 4 Spoon into prepared fluted tins, making sure not to over fill. 5 Bake in a preheated 350º F oven for 12-15 minutes or until golden. Makes 24
