Old-Fashioned Meat Loaf – Beef Veal Food Recipes

Recipe ingredients and directions:

1 lb lean beef

1 large onion, finely chopped

1/4 cup natural bran

1 slice whole-wheat bread, crumbled

1/2 teaspoon thyme

1/2 teaspoon salt

1 dash Worcestershire sauce

freshly ground pepper

1 cup tomato juice or tomato sauce

1 egg, lightly beaten

1 teaspoon chopped fresh thyme

1 teaspoon chopped fresh rosemary

1 teaspoon chopped fresh savory

1 teaspoon chopped fresh sage

In mixing bowl, combine beef, onion, bran, bread crumbs, thyme,

salt, Worcestershire, and pepper to taste. Stir in tomato juice,

egg and herbs (if using), mix lightly. Turn into 9-x 5-inch loaf

pan or baking dish. Bake in 350 F oven for 45 minutes, or until

brown and firm to the touch. Remove from oven, pour off fat.

Yield: 5 servings
