Mashed Sweet Potatoes With Ginger and Sage

Food Ingredients:
4 pounds sweet potatoes, peeled, halved lengthwise and cut into ½ inch slices 1 cup water 4 teaspoons butter 1 teaspoon dried sage 1/2 teaspoon dried ginger salt 1/4 cup toasted pine nuts

Recipe preparation:
1 Set a rack on the bottom of a large pressure cooker 2 Pour in the water, add the sweet potatoes and lock the lid in place 3 Bring to pressure over high heat 4 Reduce heat just enough to maintain high pressure; cook for 5 minutes 5 Turn off heat and quick-release the pressure. (Sweet potatoes should be tender and uniformly cooked) 6 Drain the potatoes in a large colander and remove the rack from the cooker 7 In the cooker, melt butter over medium-high heat, then reduce heat to low 8 Stir in the ginger and sage 9 Add the sweet potatoes and mash with a potato masher 10 Season well with salt; add more sage and ginger to taste, if necessary 11 Garnish with pine nuts and serve hot
