I’ve never eaten button mushrooms if you can believe it. I grew up in the
woods and some years we had bushels of mushrooms on our property. My favs
were the shaggy manes and varieties of morels. Grandpa loved inkey caps but
us kids didn’t like them.
Hey moon, which series is this from ? Thanks for the post. I usually tease
folks in some countries by saying I’m preparing antipastA. Very simple but
good basic technique as an intro to complex cooking dishes. Some Italian
restaurans insist on the whole 9 yards, 5 course meal. Wonder if that is
some cultural thing in Venice, I wanted only the main course and desserts;
old folks have a limited appetite.

anyone tried his recipe?
Tried it some days ago. This one is much better than his infamous Brokkoli
Water Soup. 😉 Used “white balsamico” instead of pure wine vinegar; Which I
found to be too sweet and dominating in the end. Next time I’d prefer to
get pure white- or probably red wine vinegar. I did not use Estragon as
well. The result was rather mild in taste (remember, no garlic). One more
thing to mention is the huge amount of oil used that magically ‘disappears’
from the dish. You don’t really see it in the end.
