Lazy Mans Chicken and Sausage Gumbo Recipe for Mardi Gras

Easy gumbo using a rotisserie chicken and cook the roux in the
microwave.

Recipe Ingredients:

1 Rotisserie Chicken
Smoked Sausage I used Andouille but use something you like

Seasoning:
1 Tablespoon of Garlic
1 Tablespoon of Cajun Seasoning Mix
1 Tablespoon of Gumbo File (optional)

2 Cups Vegetables: Onion, Celery, Bell Pepper and Green Onion

For roux:
1 cup of oil
7 oz Flour

Adjust seasoning with Salt, Pepper, Worcestershire Sauce and Hot Sauce as needed for your taste.

    Sorry, but that looks like vegetable, trinity, chicken and Andouille gravy to me. 🙂
     A traditional roux doesn't make the broth thicken like that…But I am sure it was delicious.

    I'm not sure this saved any time.  I've made a dark red roux in 1 minute, using 1/2 c. of frying oil from chicken and tossing in 3/4 c. flour and whisking fast and taking it entirely off the heat and having the vegetables ready to go in immediately to cool it down and also stock ready to go.

    Ma boy,sell that fake gumbo to northerners!!! Want some real coonass gumbo y'all come visit me in Youngsville/Lafayette La! Got some in the freezer,every cajun knows Gumbo is always better after it's been in the freezer for a while…hahaha…rotisserie chicken….PLEASE!!!

    It's funny to me that you made your own chicken broth with a ready made chicken. You should've went with some chicken bouillon cubes and water in the microwave to keep with your 'lazy man theme' for the chicken stock. I'll give this recipe a go sometime, thanks!
