Ingredients:
500g firm tofu (I use organic)
3 tbs nutritional yeast
1/2 tsp celtic sea salt (to taste)
1/4 tsp white pepper (to taste)
1 tsp garlic powder
1 tsp onion powder
2 tsp dried chives
2 tsp mixed Italian herbs
1 tbs salt reduced tamari
1 tsp dried chilli flakes (optional)
1/4 tsp black Himalayan black salt (optional but gives an egg flavor)
…. you can also add any other spices, herbs or vegetables that you like eg. mushrooms, onions, garlic, steamed broccoli etc
Top with fresh tomatoes or herbs and serve with crusty bread! YUMBO!!!

Dry chicken Seasonings
1 1/8 tsp salt
1/2 tsp blk pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried parsley
1/4 tsp marjoram
1/4 tsp garlic powder
use you fingers and grind up all the spices nice and fine
Marsala Sauce
1 lb sliced mushrooms
1 shallot
1 tbls minced garlic
cracked blk pepper to taste
salt to taste
1/2 cup chicken or beef stock (optional)
1 cup Marsala wine
1 stick butter (not margarine cheap ass)
4 tbls heavy cream (optional)

Fudge generally brings to mind a chewy texture and rich mouth-feel, which make one drool just at the thought of it. This Chocolate Walnut Fudge is sure to live up to your expectations! Made quickly and easily with readily available ingredients, it has an intense flavour, thanks to the combination of condensed milk, butter and cocoa powder. Little bits of walnuts are nothing short of a treasure in every bite, as they are an exciting contrast to the chocolaty sweetness of the fudge!
¼ cup cocoa powder
½ cup chopped walnuts (akhrot)
½ cup condensed milk
¼ cup butter
1 tbsp sugar
½ tsp vanilla essence
1. Heat a broad non- stick pan, add the condensed milk, butter, sugar, cocoa powder and vanilla essence, mix well and cook on a medium flame for 3 minutes, while stirring continuously.
2. Remove from the flame, add the walnuts and mix well.
3. Transfer the mixture immediately into a 100 mm. × 100 mm. (4” × 4”) greased square aluminium tin and spread it evenly with the help of the back of a spoon, keep aside for 30 minutes or till it cools completely and sets.
Serve immediately or store in an air tight container at room temperature for 2 to 3 days.

Cakes are often baked in the Oven or microwave. But in a country like ours electricity is a big constraint. It might have happened to you many times that you have prepared the batter and suddenly there is no electricity. Well, in such a case you can very conveniently make a cake using pressure cooker. Making a cake in a pressure cooker is as easy as making it in the oven or microwave. So, let’s learn how to make an Eggless chocolate cake in pressure cooker today.
Sieve refined flour in a bowl and add salt, baking powder with it. Whisk ghee and sugar in a separate bowl in one direction. After whisking thoroughly, add condensed milk and chocolate to the ghee. Make sure the sugar dissolves completely into the ghee. Now add dry ingredients (refined flour) into the batter little by little and whisk for 2 to 3 minutes (mix until all lumps dissolves). Whisk the batter in one direction only.
The batter for making cake is now ready. Add cashews, almonds or any other dry fruit to the batter and mix really well. Grease the baking dish for baking the cake with some ghee or butter first. Now sprinkle some refined flour to the dish and spread it evenly all around.
Spread 2 cup salt to the pressure cooker. Salt not only prevents the cake from burning, but also maintains the temperature inside the pressure cooker. Keep the pressure cooker on high flame for 2 minutes, to pre-heat it.
Now pour the cake batter into the greased baking tin and place it inside the preheated pressure cooker. Remove the whistle from the lid and close the cooker. Bake the cake for 40 minutes. After 40 minutes, check the cake. For this insert a knife or fork inside the cake. If it comes out clean then the cake is baked completely.
Allow the cake to cool and then separate it from the container. Run knife around the cake to separate it from the container.
Scrumptious Eggless Chocolate cake in a pressure cooker is ready. Cut it in slices as per your preference.

Vegetarian chili that is full of soulful flavor and hearty enough to stick to your bones??? Say it aint so!!!!
I’ll admit vegetarian chili didn’t sound that appealing to me at first. I guess I’m just not a real veggie lover (although I’m trying to be) I’m a meat & potatoes, (cakes, cookies, ice cream, pies, candy,) kinda girl and it just seemed like a cruel thing to do to chili…you know, adding all those vegetables and stuff.
My oldest sister, who is a vegetarian, has been telling me how fabulous her vegetarian chili recipe is for the longest. Even though she is one of those “healthy people” I trust her when she tells me something vegetarian tastes good. She was raised on my mothers and grandmothers soulful cooking and knows how to doctor up those vegetarian dishes like a seasoned pro.
Since so many of us are trying to watch our weight this time of year, I figured you would appreciate a hearty, savory, yet healthy dish to add to your recipe collection. (you can thank for my sister Nikki, although I did tweak this recipe a bit from the original)
This vegetarian chili recipe does not disappoint! It’s hearty, mild enough for my toddler, yet my spicy, meat- chili-loving husband gave it 5 stars! I found myself eating my second bowl without even noticing it.
It’s loaded with fresh vegetables like zucchini, peppers and corn, three kinds of beans, and a perfect blend of savory spices! This vegetarian chili can easily be customized with your favorite veggies or kick up the heat to your liking.

Ingredients & Cooking Directions for Vegan Lettuce Wraps
Estimated Servings: 4
Filling:
2 teaspoons vegetable oil
1 cup chopped yellow onion
1 tablespoon minced ginger
1 tablespoon minced lemongrass
2 teaspoons minced garlic
1 cup extra firm tofu crumbles
½ cup chopped water chestnuts
4 tablespoons soy sauce
2 tablespoons agave syrup
4 tablespoons hoisin sauce
1 teaspoon sriracha
16 large lettuce leaves
Garnishes:
½ cup grated carrots
½ cup chopped green onions
½ cup chopped fresh mint
½ cup chopped peanuts
To make the filling, turn your stove on medium heat and pour oil into a large wok or pan. Next add in the onion, ginger, lemongrass, and garlic, and cook until the onions begin to soften and everything gets fragrant. Then pour in the tofu and water chestnuts stir-frying it until heated through. Stir in soy sauce, hoisin sauce, sriracha and syrup and mix it until all the flavors are well distributed throughout the filling. Finally turn off the heat and set up your plate of lettuce leaves.
Arrange the lettuce leaves on a large platter and pour the filling into each lettuce leaf. Garnish the each lettuce leaf with all of the garnishes and serve immediately.
