    This side dish can be put together anytime and easily. We stuff our zucchini with ground beef, onion, garlic, and my very own taco seasoning made from scratch.

    It’s much healthier than those packages of taco seasoning you find in the store.

    I’ll show you how to pre cook the zucchini so that it turns out perfect after you bake them in the oven. It’s slightly firm and never soggy.

    Ingredients:

    2 large zucchini cut in half
    1 1/2 lbs of ground beef
    1 large yellow onion, super fine dice
    4 cloves of garlic, minced
    2 1/2 – 3 tsp. Rockin Robin’s taco seasoning
    1/2 cup water
    2 cups of the scooped out zucchini, chopped up
    grated cheese, monterey jack, cheddar, goat cheese, or your favorite
    olive oil
    salt to taste

    Directions:

    Preheat oven to 350 degrees F.

    Trim off the ends of the zucchini and slice in half length wise. Scoop out the flesh leaving a 1/4 inch thick shell.

    Place the scooped out zucchini in a bowl and set aside.

    Brush the zucchini boats with olive oil inside and out. Bake in a 350 degree F. oven for 15 to 20 minutes or until they are slightly tender.

    Saute the onion in olive oil in a large frying pan over medium high heat. Add the ground beef after 2 minutes and cook until the hamburger is no longer pink.

    Drain any excess oil and return pan to the stove. Add the garlic and stir to combine. Then add the taco seasoning and water and stir till mixed in.

    Add the chopped up zucchini to the beef and cook over medium heat for 5 minutes.

    Stuff the zucchini with the meat mixture, mounding slightly. Top with grated cheese and bake in the oven at 350 degrees F. for 20 to 30 minutes.

    Serve immediately and enjoy!

    This dish is gluten free.

    Greetings! Time got away from me this past Sunday when I wanted to make a pot roast. The answer? The pressure cooker of course! cooking the roast under pressure for about an hour and letting it stew for another 2 or 3 made a lovely pot roast that tasted just like I had cooked it all day.

    I use a Wolfgang Puck Electric Pressure Cooker and I love it. I highly recommend that you look into purchasing an electric model for yourself. It saves time and helps you make slow cooked style meals fast. I really love mine and use it often, but oddly, not as often as I should.

    You don’t have to have a pressure cooker to make a pot roast. You can make this in your crock pot, slow cooker or just in a casserole in your oven. No matter what you choose, pot roast is always a welcomed dish for dinner and makes for a happy family!

Butter, lots of garlic, Italian Seasoning and Red Pepper Flakes are melted together and then drizzled over the extra crispy deep fried wings.

    Lamb Shanks in Portobello Sauce with White Bean and Chicken Sausage

    Prep time: 15 minutes
    Total time: 45 minutes
    Serves: 4

    Ingredients:
    Lamb shank, Chicken Andouille sausage, Cannellini beans, Stock, Celery, Carrots, Garlic, Bay leaves, Onion, Dried thyme, Olive oil, Dried thyme, Cannellini beans

    Preparation:

    Preheat oven to 375
    Place lamb shanks ovenproof dish
    Cook for 30 minutes
    Place Dutch oven on stove and add oil
    Chop sausage and place in Dutch oven until brown
    Set sausage aside
    Heat celery, carrots, and onion for 2-3 minutes
    Add finely chopped garlic, cook for 2-3 minutes
    Add stock
    Mix in beans and sausage
    Add bay leaves
    Cover and cook 15-20 minutes

    To Serve:
    Layer in serving dish and add lamb shanks.

    INGREDIENTS
    2 firm eggplants (10-12 ounces each), cut into 1/2-inch slices
    Salt and pepper
    1 pint cherry tomatoes, quartered
    1/2 small red onion, finely chopped
    Extra virgin olive oil (EVOO), for brushing and drizzling
    Chopped pitted black olives, capers and/or anchovy fillets (all optional)
    4 ciabatta or other crusty rolls, split
    2 cloves garlic, halved
    8 slices fior di latte (fresh mozzarella) or buffalo mozzarella
    16-20 leaves fresh basil

    PREPARATION

    Pre-heat the oven to 500°F or an outdoor grill to high. Arrange the eggplant slices on paper towels. Salt both sides, then let drain for 10 minutes, turning once.

    Combine the tomatoes with the onion and dress lightly with EVOO. Season with salt and pepper. Add the olives, capers and/or anchovies, if using.

    Brush the eggplant with EVOO on both sides, then roast in a baking pan in the oven, or grill, covered, turning occasionally, until tender and browned, 10-15 minutes. Toast the rolls in the oven or on the grill until crisp, then rub the cut sides with the garlic and drizzle with EVOO.

    Stack the eggplant, mozzarella and basil on the roll bottoms. Top with the tomato salad and roll tops.

    Perfect for Cinco de Mayo or any party or Latin/Mexican dinner night! I serve mine with sour cream, salsa and sometimes with my guacamole recipe. You can make these empanadas spicy or mild, by simply adjusting some of the ingredients. I did a little research when I decided to make these and found the origin of authentic empanadas traces back to Portugal and Spain, but they’re also popular in South America and various version can be found world wide. In Mexico, meats and mixed vegetables are used in fillings for empanadas, but they are also served with sweet fillings for breakfast or dessert. Empanadas served for dessert and breakfast are filled with pumpkin, sweet potatoes, yams, cream and a variety of fruit fillings. Meat Empanadas can be filled with chicken and cheese, pork or beef. Traditional empanadas can be served in larger form as a main dish, or smaller for an appetizer, snack or dessert. My version is a quick method without frying and is suitable for a snack or appetizer, although when I made the video for this recipe, my hub and I ate enough to be considered a main course! lol They are tasty and simple to make. I hope you enjoy them! I also have a chicken and cheese enchiladas recipe and chicken and cheese quesadillas recipe, which I’ll get around to posting.
