    Chicken
    300g chicken breast, cut into 2cm chunks
    3-4 large dried chillies
    50g roasted peanuts
    1 tbsp vegetable oil
    1 tsp sesame oil
    2 spring onions, finely sliced

    Marinade
    1/8 tsp bicarbonate of soda
    1 tsp cornflour
    2 pinches of salt
    2 tbsp water

    Sauce
    1 ½ tsp ginger, diced
    2 garlic cloves, diced
    ½ tsp Sichuan peppercorns, ground
    1 ¼ tbsp sugar
    pinch of salt
    1 tsp dark soy sauce
    1 ½ tbsp Shaoxing rice wine (or dry sherry)
    1 tbsp Chinkiang vinegar (or ½ tbsp balsamic vinegar mixed with ½ tbsp water)
    3 tbsp water

    How to eat healthy when you’re on the go and uninspired? Here are 3 healthy vegetarian/vegan meals: breakfast, lunch and dinner in 5 minutes. I love food but I can’t stand all that time in the kitchen, so the solution is quick meals to get me through the day with snacks and water in-between. Because I know people will ask, no I’m not a strict vegetarian/vegan. Given the option I will always choose vegetarian, but when those options are non-existent or wack, I’ll eat seafood and chicken. I’m more about being practical…there’s no reason why people should be eating meat and dairy everyday! The impact heavy consumption of all things including animals has on the planet is insane! Be mindful and make incremental changes. Eat meat and dairy but do you need it everyday? Make sure to share your personal recipes and ideas so we all can get inspired.     BANANARAMA SMOOTHIE BOWL
    in a blender:
    – half a banana
    – healthy splash of almond milk
    – 1-2 spoons of peanut or almond butter
    – 1-3 dates
    – 1 spoon of coffee grinds
    – 3-6 ice cubes depending on how much milk you use. Ice cubes make it consistent like icecream
    – topped with granola
    – optional toppings: almonds, shredded coconut, chia seeds

    VEGGIE SUSHI BOWL
    – white or brown rice
    – seaweed, cucumber, carrots, baby spinach, avocado, sliced and arrayed purdy 🙂
    – ginger for taste
    – dressing: sesame oil and soy sauce

    PESTO PASTA BOWL
    To make pesto, use a food processor and add:
    – basil
    – pine nuts
    – salt & pepper
    – olive oil

    Mix with pasta and toss in veggies of your choice. I used tomatoes, cucumber, and forgot avocado!!! You can use whatever!

    Ingredients: (feeds 4 people as appetizer)
    – 2 duck breasts
    Sauce
    – 50 g butter
    – 400 ml poultry fond
    – juice of half an orange
    – 100 ml of your favourite dark beer
    – 2 tablespoons honey
    – pinch of salt

    How To:
    Sauce (gravy)
    – Mix the ingredienst
    – Boil down to a sirup
    ( you can make this sauce (gravy) the day before. Let it cool down and store in the fridge. 10 minutes before using re-heat it au bain marie)

    Duck breast
    – Cut back half of the skin
    – Slice of half the filet. (save it for another day)
    – Smoke the filet with the skin. (skin folded back)
    – Smoke for 10 minutes
    – Put a skillet on he grill and let it pre heat.
    – Put oil in the skillet
    – Use a skewer to pin the skin to the meat of the filet
    – Grill the duck breast for about 5 minutes.
    – The skin should be crispy and golden brown

    Aguas frescas is a drink popular in Latin America, Mexico, and of course here in the United States.

    In Latin America and Mexico it is primarily served by street vendors and in Mexican restaurants here in the States.

    Find a nice ripe watermelon and if by chance your watermellon is not that sweet, not to worry. We can add a little simple sugar to the mix.

    I show you how easy it is to make simple sugar, so I’ve got you covered. Why use simple sugar instead of just stirring in some sugar?

    Well for one thing, stirring in sugar doesn’t dissolve very easily. Simple sugar is already dissolved so it goes in great.

    This is the perfect drink when summer brings a hot day! It will cool and refresh you.

    Here are the ingredients:
    1 ripe watermelon
    simple sugar
    1 lime
    1 sprig of fresh rosemary

    Directions:
    Cut the watermelon in half and scoop out the flesh and fill a blender with it. Add 1 and 1/2 cups to 2 cups of cold water and blend for about 1 min.

    Strain the juice into a jar or pitcher. Taste and add simple sugar to your liking. Roll the lime before cutting and squeeze half a lime into the watermelon water.

    Toss in the sprig of rosemary. Chill.

    When ready to serve, fill a glass with ice and stir before pouring into glasses. Garnish with a lime wheel on the glass or a piece of cut watermelon.

    Enjoy this refreshing summer drink. It’s satisfying not to mention healthy!

    Victoria Paikin pleased to present about Easy French Toast Recipe With Cream Cheese Filling that is easy and fast to make and just spectacular to eat.

    Easy French Toast Recipe


    Ingredients:

    slices of white bread

    1 extra large egg

    2 tablespoons milk

    1 teaspoon vanilla extract

    4oz cream cheese, softened

    2 tablespoons sugar

    2 tablespoons butter

    ¼ cup raisins

    1 teaspoon cinnamon


    Directions:

    In shallow dish mix egg, milk, ½ teaspoon vanilla extract and 1 teaspoon sugar and set aside.

    In separate bowl make filling: mix cream cheese with ½ teaspoon vanilla, 1 teaspoon sugar, pinch of cinnamon and raisins until well blended.

    Spread filling on one piece of bread and cover it with second one. Make the same to other 4 pieces of bread.

    Dunk the sandwiches on both sides in egg and milk mixture.
    Preheat large skillet to medium heat, then add 1 tablespoon of butter and melt it.

    Place French toasts on a skillet and fry them for 2 minutes on one side or until get caramelized. Flip to the other side and add the rest of the butter. Fry them for another 1-2 minutes on the other side or until beautiful and brown.

    On a plate mix the rest of sugar and the rest of cinnamon.

    Sprinkle French toast with sugar cinnamon mix and enjoy!

    1 cup (250 ml) of vegetable oil
    1 cup (250 ml) of milk
    2 1/2 cup (400 grams) fine semolina
    2 full tablespoons (20 grams) all-purpose white flour
    2 teaspoons baking powder
    Ingredients for the syrup:
    3/4 cup (200 ml) fresh orange juice
    3/4 cup (200 ml) water
    1 1/2 cup (200 grams) powdered sugar
    1/3 cup (100 grams) honey
    2 teaspoons orange blossom water (ma’a zahr)

    A few of you requested that I share more healthy lunch ideas for packing in your Fablunch containers. I immediately thought of these Kale Salad Bowls made with quinoa and sweet potatoes. I know you guys will absolutely love them. I first tried a very similar salad at Whole Foods in their prepared food section and fell in love. All the ingredients were very easy to find. So next day I made my own version at home.

    The original salad is made with spinach, but I decided to go with kale because I find that it maintains its texture better compared to spinach when you prep your lunches in advance. But feel free to use any greens that you like!

    Chickpea Curry with Sweet Potato and Kale

    1 tbsp olive oil
    1 small yellow onion, diced
    2 cloves garlic, minced
    1 tsp fresh ginger, minced
    2 tbsp curry powder
    1 cup vegetable broth
    1 large can chickpeas
    1 large sweet potato, peeled and diced
    1 large can diced tomatoes
    2 cups baby kale

    In a frying pan, heat oil over medium high heat.
    Add onion and sauté until soft and translucent, about 3-4 minutes.
    Add garlic and ginger and sauté for another 30 seconds.
    Add curry powder and sauté for another 30 seconds.
    Add vegetable broth to deglaze pan.
    Pour onion, garlic and ginger mixture into slow cooker.
    Add chickpeas, sweet potato, kale and diced tomatoes.
    Stir to combine.
    Cook on low for 6-8 hours.
    Serve immediately or freeze for up to 6 months.

    INGREDIENTS IN THIS DISH:

    400g Can of Chickpeas (drained and rinsed)
    1 Carrot (peeled and grated)
    3-4 Button Mushrooms (finely diced)
    1/4 Cup of Sliced Sundried Tomatoes
    1 Clove of Garlic (crushed)
    Salt and Pepper
    1 Teaspoon of Ground Coriander
    1/2 Teaspoon of Mild Paprika
    2 Eggs
    1 Cup of Dry Breadcrumbs
    Bread Rolls and Salad (to serve)

    NOTE: If you don’t want to use eggs, use some store-bought apple sauce to bind the mixture 😉

    Preparation Time: About 15 minutes
    Cooking Time: About 10 minutes

    SERVES 4

    ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

    Martha Stewart’s Paté Brisée Pie Crust Recipe (for one double-crust or two single-crust pies:
    Ingredients
    2 3/4 cups all-purpose flour
    1 1/4 teaspoons salt
    1 cup (2 sticks), plus 2 tablespoons cold, unsalted butter cut into small pieces
    1/2 cup ice water

    Directions
    1. Pulse flour and salt in a food processor to combine. Add butter cut into small pieces, and pulse until mixture forms coarse crumbs with some large pieces remaining (about 10 seconds).
    2. With machine running, add ice water in a slow, steady stream until dough just holds together without being wet or sticky, no longer than 30 seconds.
    3. Divide dough in half; flatten and shape into disks, and wrap each in plastic. Refrigerate at least 1 hour or overnight.
    4. Roll out dough and place in pan.
    5. Decorate edge and poke bottom with fork.
    6. Put back in fridge for at least one hour (this prevents crust from shrinking).
    7. Preheat oven to 425 degrees Fahrenheit.
    8. Put foil in pie dish and add dry pinto beans to full.
    9. Bake for 15 minutes at 425 degrees Fahrenheit.
    10. Reduce temperature to 375 degrees Fahrenheit and remove foil and beans (CAUTION: BEANS WILL BE HOT).
    11. Bake for another 5 to 7 minutes.
    COOK’S NOTE: For the flakiest crust, make sure all ingredients (including flour) are cold when you begin.

    Pie Filling Recipe:
    1 cup (packed) light-brown sugar
    1 tablespoon cornstarch
    1/2 teaspoon salt
    2 teaspoons pumpkin pie spice
    1 teaspoon cinnamon
    1 1/2 cup fresh pumpkin puree or canned
    3 large eggs (lightly beaten)
    1 1/2 cup evaporated milk

    In a large bowl, combine sugar, cornstarch, salt, pumpkin pie spice, cinnamon, pumpkin puree, and 3 eggs. Beat well. Add evaporated milk, and combine. Fill pie shell.
    COOK’S NOTE: For shiny pie shell edge, baste with egg yolk mixed with one tablespoon of heavy cream before adding filling.

    Bake at 425 degrees Fahrenheit for 10 minutes. Reduce heat to 350 degrees Fahrenheit and bake for additional 50 to 60 minutes. Cool on wire rack.

    For this Bacon Wrapped Jalapeno Chicken Thighs recipe I’m using boneless, skinless chicken thighs. You can find these at your local grocery store fresh or frozen, and you can even debone them yourself if you want.

    Ingredients for Bacon Wrapped Jalapeno Chicken Thighs:
    – 8 Boneless Skinless Chicken Thighs
    – 4 Jalapeno Peppers
    – 8oz Cream Cheese
    – 8 Strips of Compart Applewood Smoked Bacon
    – 1 Stick of Real Butter
    – Killer Hogs The BBQ Sauce (or your favorite BBQ Sauce)
    – Killer Hogs The BBQ Rub (or your favorite BBQ Rub)

    All Purpose Rub:
    – 1 cup Salt
    – 1/2 cup Granulated Garlic
    – 1/4 cup Black Pepper

    Remove the thighs from the packaging and place on a cutting board designated for poultry. If there is any excess fat on the thighs go ahead and trim it off. Season each side with a good dose of my All Purpose Seasoning.

    Split the Jalapeño Peppers in half lengthwise and remove the seeds and veins. Fill each half with cream cheese and sprinkle a touch of Dry Rub on top.

    Place the stuffed pepper cheese side down in the center of each chicken thigh and form the meat around the pepper. Next wrap each thigh with a strip of bacon. For this recipe I use Compart Duroc Family Farms Applewood Smoked Bacon. You can find it online at www.compartdurocpork.com

    To keep the thighs in a natural shape while cooking I use one of my Competition Chicken Pans. Spray the pan with cooking spray and place each thigh upright in the pan. Season the thighs with a little Killer Hogs Dry Rub and place a Tablespoon of Butter on each one.

    For this cook I’m using my Big Green Egg running at 300 degrees. Throw on a couple chunks of pecan for some smoke and place the chicken pan on the center of the grate.

    After 45 minutes the bacon should start to brown and the chicken will have absorbed enough smoke flavor. Cover the pan with aluminum foil and continue to cook until the internal temperature hits 165 degrees. At this point remove the pan from the smoker. Be sure to where insulated gloves because it will be hot. Carefully take each thigh out of the chicken pan and re-season each side with Bbq Rub. Place the thighs on a chicken rack and back out on the smoker for 5-10 minutes. This gives the rub time to dry.

    For the finishing glaze I use a bottle of Killer Hogs The Bbq Sauce. Heat it in a small pan or in the microwave for 5 minutes stirring occasionally. Once the rub has set, dunk each thigh in the warm sauce and place it back on the rack to drain.

    The rack goes back on the Egg for a final 5-10 minutes. Just long enough for it to “tack up”. If you see it getting dark remove the thighs immediately.

    Let the thighs rest for just a few minutes and they’re ready to serve these Bacon Wrapped Jalapeno Chicken Thighs.
