Kale & Quinoa Stir-fry | Healthy Lunch Ideas

This healthy kale & quinoa stir fry is perfect for any meal of the day and is packed full of protein, fibre and healthy fats!

INGREDIENTS

Makes 2-4 servings (depending on how hungry you are)

-1 bunch of raw kale
-eggs (1-2 per person)
-1 tbsp coconut oil (half for eggs and half for kale stir fry)
-1 tbsp crushed garlic
-2 cups of cooked quinoa (Healthy Tip Tuesday coming soon!)
-1 can of black beans (I like Eden Organic)
-salt & pepper to taste

    Great idea with a few substitutions, spinach for kale and rice for quinoa,
    sliced boiled egg for the fried egg. I think I would like that.

    I really like your recipe videos! Could you please do a video on planning
    meals and meal prep, if possible? I’d really like to start planning my
    meals properly (and sticking to it) as I tend to just get takeaway which is
    almost never healthy, plus costs waaaaay too much. Also I’d love to see
    motivational videos too, those are my favourite. :)

    Love this! looks soo yummy, you should totally add some chilli flakes or
    some ginger in that stir-fry, helps with congestion and speeds up your
    metabolism, which improves the process of healing ;)

    Is your quinoa a certain type? Mine never fluffs up like rice it just stays
    in little circles. I cook it long enough idk what’s up with mine.
