    He said in one other video that a classic french omelet is not brown but a pale yellow and to constantly stir and move it. So he's saying two different things.

    I truly hope to god he was drunk off his ass in this video. Seeing him cook like this makes his first legendary omlette video lose all of its validity.

    It is nothing like on another video about making a French omelette. He vigorously shook the pan and stirred to make small curds and the browning would not have been allowed. Good video but wrong title. It should have been making an omelette, not a French omelet.

    Browning is not a defect. Matter of taste. In Larousse gastronomique the eggs are much browner.

    it's the holy grail on omelette making I think. Teaches both French omelette and American one. Omelette making is a good litmus test for good cooks. Hehe enjoy
