    Thank you so much for making this video! I made homemade pasta for the
    first time tonight. I used the Giada recipe with 2 cups of cake flour and
    one cup of unbleached white flour. But I used your cavitelli (spelling?)
    shaping method and it came out awesome! My girlfriend was very happy with
    it. I can’t wait to try fettucine. It gives me joy watching someone
    like you cooking the way you do and handling the pasta like a pro and it
    looks like you might have trouble seeing out of one of your eyes. I can’t
    thank you enough.

    Doesn’t the dough require any kind of kneading? I always thought that’s
    what created the toothsome texture of pasta. Wouldn’t un-kneaded pasta
    dough be very soft when cooked?
