How to make Healthy Spicy Tropical Tostada Appetizers

Here is a how-to video for making healthy delicious tasting appetizers! They make for great additions to parties or just a dinner at home with the family. Please excuse any errors or faults, its my first video so expect them to get better.

Game Day Recipe: Tropical Healthy Spicy Mini Tostadas

This will make 30 as opposed to the stated 12 in the video

Preparation:
Preheat oven to 375 degrees F

Ingredients:
1 cup of diced red peppers
1 cup of diced Mexican squash
1 cup of crushed /or cubed pineapple
1 diced jalapeno
1 cup of Mozzarella cheese
30 round tostada chips

In medium sized bowl, combine red peppers, Mexican squash and jalapeno, stir lightly just to mix together. Heat skillet on med/high heat add one tablespoon of Olive Oil. Sauté mixture just until heated well and coated with oil. Do not overcook or allow mixture to become well done.

NOTE: If you are using cubed pineapple you will need to cut them in half

Remove mixture from heat and pour back in the medium bowl that you were using previously to mix, add the pineapple, toss, do not stir vigorously. Place chips onto a large UNgreased baking sheet or baking stone, top with mozzarella, place into oven for 3 minutes (or until cheese melts), remove, let cool for 30 seconds, use a spatula to remove from baking sheet/stone and place onto serving platter.

Enjoy with a glass of sparkling wine or Champagne to celebrate your teams victory.
