    No you can use oil.

    you can use any type of fat, but each type of fat imparts it's own flavor to the finished gravy. I like using bacon or sausage fat. Vegetable oil is pretty flavor neutral, so if you use Vegetable oil, the spices you add become that much more important. Besides salt and pepper, I like to add a little onion powder. Experiment! That's the beauty of cooking.

    Would I be able to use vegetable oil? im just confused because would oil be a decent replacement when making gravy instead of lard?

    I just wanted to know how the breading was done. But, one thing i noticed; you shouldn't put the salt on meat until it is ready to cook. Salt naturally draws water content out of meat. This is good but, you don't want it too dried out. I always leave my red meats out til room temperature then add salt to it right before I cook or bread it. Also you should never add pepper to meat at all while it is cooking. Why you might say? Well, pepper burns while it is cooking, so pepper could leave a bitter taste to your red meats if it is done this way. Always add pepper after it is done and on your plate ready to eat.

    Hate to be a stickler, but this is chicken fried steak. Country fried steak is served submerged in brown gravy, slow-cooked. Chicken fried steak is crispy with milk-pepper gravy.

    I agree with some earlier – this is Chicken Fried Steak… And a damn good looking one for sure. I like to fry mine like this as well with just a little bit of oil/lard. I am not a fan of totally submerging it in a pool of fat.
