How do you SEAL beef ?
Make it with Pate du Fois Gras and it is even better. This is weird that he
does not give you the temp of the oven or time of cooking,that is the
tricky part of this most difficult but delicious dish. The truffle gravy
was left out as well…its the most expensive dish on a menu when made
properly in France. Love his restaurants like Maze in NYC, he is cool.
