Highland Oat Squares
Food Ingredients:
2 ounces Vegetable margarine 1 Finely chopped onion 4 ounces Mushrooms, chopped (optional) 5 ounces Rolled oats 6 ounces Finely grated carrot 5 ounces Vegetarian cheese, grated 1 Free range egg, beaten 1 Clove garlic, crushed (optional) 1 tablespoon Soya sauce 1 tablespoon Tomato sauce or puree 1 teaspoon Basil Salt and black pepper to taste
Recipe preparation:
1 Preheat oven to 170 C/325 F/gas mark 3. 2 Melt the margarine in a pan. Gently cook the onion and mushrooms for 5 minutes. Transfer them to a mixing bowl and add all the other ingredients. 3 Season to taste with salt and pepper and mix well. Press mixture into a greased, shallow baking tin and bake for 25-30 minutes. 4 Cut into 20 small squares and serve.
