Why do Indian chefs not toast their spices? They only gently heat them to
remove any water but if already dry roasting them actually removes flavour
and can taste slightly acrid. Toasting is for wankers.. Simples.

flavor/juice, 3. Don’t over-work the meat (he was kneading it like a piece

@jgonsalk I did take shortcuts. Some of his suggestions are just not
practical or you have to re-engineer them. One trick I’ll give u is to
press the centre of your burger when u r frying it or noticing it’s going
from disc to ball shaped.
