New Year, New You! Healthy and delicious gluten-free berry cobbler. No one will know it’s good for you!
Preheat Oven to 375*
Mix together into a bowl:
4 C Blueberries
2 C Strawberries
1/4 C Flour (I used ground down GF oats)
1 T Lemon Juice
Zest of 1 lemon
1/2 Teaspoon Pumpkin Pie Spice
Dash of Salt
Transfer to an 8×8 pan.
Mix together:
3/4 C Rolled Oats
3/4 C Flour
1/8 C Maple Syrup
1 T Pumpkin Pie Spice
Dash of Salt
3 T Cold Butter (cut into small pieces)
Top berry mixture with oat mixture
Bake at 375* for 1 hour, uncovered
