Healthy Chicken Pesto Rice Salad Recipe

This Chicken Pesto Rice Salad features lean chicken breast, grape tomatoes and artichoke hearts tossed in a basil walnut pesto for a salad that defies convention. The preparation is made easier with quick cooking Minute brown rice. And the pesto is made with heart healthy walnuts instead of the usual pine nuts since their nuttier flavor is a better compliment to the brown rice. Walnuts are also far more economical than their pricier pine nut cousin.

I never knew the technical trade term was "packages". Your channel does an incredible job of providing easy-to-follow cooking tutorials in a concise format. I guess you could say that good things certainly do come in small packages. Thanks for stopping by.

I'm just fine Avoir. I hope you're doing well too. As far as the nut allergy, I understand completely about working around allergies. There's always something out there to substitute for the offending foods. With your cooking skills I'm sure you always have something good on the table my friend.

Thanks David. Mostly all rice is gluten free unless its some sort of already cooked rice and they season it with strange gluten containing ingredients. You alway have to be on the lookout with premade type stuff.
