Green Tea Salad Dressing

Food Ingredients:
1 teaspoon Green tea leaves, (gyokuro is best but Sencha or Gunp 100 ml Hot water, (3 1/2fl oz) 1 teaspoon Caster sugar 2 Strips lemon zest Salt and freshly ground black pepper 2 tablespoons Hazelnut oil 2 teaspoons White wine vinegar

Recipe preparation:
1 Infuse the tea leaves in the hot water (don’t use boiling water) for 5 minutes then strain into a pan. Add the sugar and bring to the boil and simmer until the liquid is reduced to 2-3 tbsp. Add the strips of lemon zest and leave to infuse until cold. 2 Remove the lemon zest, add the oil, vinegar, salt and pepper to the liquid and whisk.
