    That is one TINY bird! 5kg would barely feed my family. We roast a 14-16
    bird for 8 people and there are barely any leftovers and we are an
    athletic, lean family!

    I saw Chef Pepin roast chickens and turkeys upside down at 450 for the
    first 30 minutes, then turn it right side up, spray with pam, put a piece
    of foil just on the breast and turn down oven to 325 for the rest of the
    time. I load the cavity with fresh rosemary and thyme and parsley stems
    too. Works GREAT! Ramsey’s gravy looks good though.
    MY trick is cooking upside down at first then spray with 100% vegetable oil
    spray a few times.

    all the juices drain into the bottom of the pan, it’s called gravity,
    outsmart it and cook it breast down, if you want it better than that, put
    it breast down in an oven bag. your grandmother will be asking for tips
    after she tastes it.

    I made this. Wow! Really good and compliments all around. Only my second
    turkey I ever cooked too.

    Last year, I did the first timers turkey on some random vid and fucker was
    under cooked and nasty.
