Fast Kid-Friendly Coleslaw
Food Ingredients:
1/4 head of cabbage, chopped or shredded 1 1/2 cups carrots, chopped or shredded 1 apple, diced (or you could substitute pear) 1 tablespoon fresh squeezed lemon juice cup vegan mayonaise splash of apple cider vinegar 1/2 cup raisins sea salt to taste
Recipe preparation:
1 Chop or shred cabbage and carrots, place in large mixing bowl. 2 In small bowl, add diced apple and lemon juice; toss well and add to cabbage and carrots. 3 Now add in mayonaise and apple cider vinegar, tossing it all together. 4 Throw in the raisins and mix again. 5 Season to taste. 6 Refrigerate for at least an hour to help the flavors blend.
