Good video, but I’m afraid you’re picking your eggplant too early. I grow
vegetables for sale, and I grow my bollo eggplant to be two or three inches
larger than that. That’s the only term I know them by, in mexico they are
known as “Bollo” eggplants, because they are shaped like a ball, and bollo
means ball in spanish. Even though you could get more food value out of
your eggplants, I guess picking them early doesn’t really hurt, they still
taste the same either way.
I never try this, I will make it hopefully today. Look great and delicious

This looks so good. But why don’t you purge your eggplant? 
Looks delicious, wish I can grow such good looking eggplant (my mother made
the eggplant like you she would fry but I bake). Thanks for sharing, I love
you giving some good Italian food to your dog, nothing like sharing with

restaurant near Catania in Sicily.
Today I was looking for another way of preparing eggplants and bumped into
your Eggplant Parmesan video, it looks absolutely amazing, I’m so excited!!
